Spaghetti-Shrimp-Chorizo;Recipe for the Malnourished

Malnutrition as we all know, affects the body’s ability to stay healthy and fight infection. This tasty dish contains all the necessary nutrients (iron, vitamin B1, B2, B6, B12, C, E, protein) that help nourish the body and prevent malnutrition. 
  The basic ingredients that are used for the preparation of this dish are spaghetti, sausage, shrimps and vegetables (tomatoes, pepper, onion, garlic). These vegetables are loaded with health-protective antioxidants such as lycopene, vitamin C, and vitamin A.
  Studies have shown that regular consumption of these vegetables promotes healthy living and prevents many diseases. Shrimps and sausage supply high quality protein, essential vitamins and other nutrients with high biological value. Ingredients              Quantities
Shrimp                    500g
Chorizo sausage      200g fully cooked
Spaghetti                 1 packet
Virgin olive oil        3 tablespoons
Onion                      1 medium size (chopped)
Garlic                      4 cloves  (finely chopped)
Cherry or grape
tomatoes                  6 small size (cut into 2)
 Salt A pinch
Freshly ground
black pepper            To taste
Fresh parsley           1 small bunch (chopped)
Method of Preparation
Put a large pot of salted water on to boil for the pasta.
Peel and devein the shrimp, leaving the tails on and set aside.
Remove the casing from the sausage, quarter the links lengthwise and cut crosswise into ½-inch pieces and set aside.
Heat the olive oil in a large pan over medium heat and add the onion.
Sauté until soft and translucent (about 2 minutes), then add the garlic and continue cooking for 1 minute longer.
Add the chorizo sausage and bring the mixture to simmer.
Add the shrimp and cook, stirring constantly, until they begin turning opaque around the edges, about 1 minute.
Add the tomatoes, season with salt and pepper, and continue cooking until tomatoes soften slightly and the shrimp is fully cooked, 2 to 3 minutes longer.
Remove from the heat, cover to keep warm and set aside.
Cook and drain the spaghetti according to package directions. Add the pasta and parsley to the shrimp mixture, toss to combine and adjust the seasoning to taste.
Serve hot with cold mango and pineapple juice.
